Tiên’s Sandwich will begin serving customers in Wiregrass Ranch in November.

The new shop is led by Vietnamese chef Chau Le and her husband Tommy Nguyen. They plan to open the fast-casual spot at 2557 Mansfield Blvd. The establishment will feature a menu of Vietnamese-French submarine-style sandwiches and boba tea.

Sandwich prices range from $8.95 for a classic option to $10.95 for a premium banh mi. The menu also includes beef pho, vermicelli bowls, and spring rolls. The interior seating capacity is approximately 40 patrons.

Nguyen said the baguettes are baked in-house using a proprietary flour mixture. He stated the blend is designed to achieve a specific crunch consistency and airy fluff. Nguyen and Le traveled to Vietnam earlier this year to study dough techniques. They compared flour blends from different regions to ensure the bread is not too doughy.

The couple noted that local residents have frequently requested another Vietnamese dining option. Nguyen said community members have expressed concern that new openings in the area are often expensive chains. He stated that family-owned restaurants in the region are closing at a high rate.

Nguyen said the shop is named after their daughter. He added that the family aims to customize the menu to match local preferences. The business is part of a larger family operation that has consulted for restaurants in Fort Lauderdale, Orlando, and Tampa Bay.

The family previously owned and operated Pho Nhu Trang on West Waters Avenue in the Egypt Lake-Leto neighborhood. That location is now occupied by Viet Kitchen. Nguyen said the couple plans to add regional specialties to the menu in the future. They have also stated they are considering opening a full-service restaurant down the road.
